Preheat the oven to 375°F. Line a baking sheet with parchment paper or a silicone mat. Mix butter and sugar together until light and fluffy. Add 2 egg yolks and the vanilla extract, and mix well. Add the flour and mix on low speed just until the dough starts to clump.
Lightly flour the counter. Use your hands to shape the dough into a big ball. Sprinkle some flour on top then use a rolling pin to roll the dough out. Roll dough until it’s about 1/4″ thick. Use a medium round cookie cutter (about 2 inches) or lip of a glass to cut cookies. Use a spatula to transfer the cookies to the baking sheet.
Beat the remaining yolk in a small bowl. Brush the tops of the cookies with the beaten egg yolk. Bake the cookies for 12 to 15 minutes, until they’re a deep golden color.
Optional: Once cookies have cooled, fine sugar can be sifted or sprinkled on top for extra decoration.
