Butter-Infused
Old Fashioned

Washing the bourbon in brown butter adds a layer of intriguing warmth to this sophisticated cocktail.

STEP 1: BROWN-BUTTER WASH THE BOURBON

Slowly brown 1/2 cup unsalted French butter in a saucepan until well toasted. Remove from heat and allow to cool. Pour one 750 mL bottle of bourbon into a plastic container and gently stir in brown butter. Leave until the butter has firmed and rose to the top of the container. Freeze the mixture, skim off solids, then strain through cheesecloth to remove the rest of the solids. Cover with lid.. This bourbon will keep for a few weeks.

STEP 2: assemble the cocktail

In a rocks glass, muddle the bitters, brown sugar syrup, orange peel and cherry. Add the bourbon and 1 large ice cube and stir.

STEP 3: garnish

Adorn with swaths of orange peels and a maraschino cherry. Your delicious cocktail is ready! Here is the perfect side for your fish, shellfish, or meats!
