Heat Grill to medium, best to use charcoal or add smoker chips.
Add French butter, maple syrup, vanilla, and salt in a small skillet over low heat, whisking until butter is melted.
Grill peaches cut side down, brushing with butter mixture as they cook, until lightly get nice grill marks. Transfer to a platter cut side up, and brush with additional butter mixture. Let peaches cool then serve with ice cream.
