  • 3.5 oz softened semi-salted butter
  • 1 tsp. of fresh ginger grated with a microplane or cut into very small cubes
  • 1 tbsp. finely chopped chives

Cooking butter for roasting prawns, mixed with rye breadcrumbs to coat clams, scallops and mussels, or to flavor snails.
