STEP 1: bake eggs

Preheat the oven to 400ºF and grab a muffin tin! Grease each section with French butter and add about 1.5-2 tbsp. of water in each cup.

Then crack an egg and drop it in each one. Bake for about 10 minutes.

STEP 2: prepare hollandaise

While the eggs are baking, prepare your Hollandaise sauce by melting your 8 tbsp. of European butter from France in the microwave on low, uncovered, for about 30-45 seconds.

Stir until the butter melts or place the butter back in the microwave and heat in 10 to 30 second increments, stirring until it is fully melted.

Add it to a blender along with the egg yolks, lemon juice, and salt / pepper. Blend until smooth and set aside.

STEP 3: serve

Toast your English muffins and fry your Canadian bacon on the stovetop.

Assemble everything when done, starting with the English muffin, then the Canadian bacon, egg, and drizzle with a ton of that delicious Hollandaise! IT IS SO GOOD!
