Seriously Simple French Butter Cookies recipe

These cookies crisp up quickly in the oven and melt instantly in your mouth!

STEP 1: MAKE THE DOUGH

Preheat the oven to 375°F. Line a baking sheet with parchment paper or a silicone mat. Mix butter and sugar together until light and fluffy. Add 2 egg yolks and the vanilla extract, and mix well. Add the flour and mix on low speed just until the dough starts to clump.

STEP 2: ROLL AND CUT

Lightly flour the counter. Use your hands to shape the dough into a big ball. Sprinkle some flour on top, then use a rolling pin to roll the dough out. Roll dough until it’s about 1/4″ thick. Use a medium round cookie cutter (about 2 inches) or lip of a glass to cut cookies. Use a spatula to transfer the cookies to the baking sheet.

STEP 3: BRUSH and BAKE

Beat the remaining yolk in a small bowl. Brush the tops of the cookies with the beaten egg yolk. Bake the cookies for 12 to 15 minutes, until they’re a deep golden color.
